Our Bread

Our bread is handmade on site and baked daily using organic wheat and a long, naturally leavened fermentation process to bring out the maximum flavor and nutrition out of the grain. No commercial yeast here, we mix by hand the way it’s been done for hundreds of years.

Organic rolled milled wheat flour, sea salt, wild yeast culture, fresh yeast. Traditional Parisian loaf with complex flavor due to long fermentation. Creamy yellowish crumb. (V)

Challah

Roller milled wheat flour, organic eggs, sugar, vegetable oil, yeast, sea salt. A traditional braided Jewish egg bread. Slightly sweetened and soft.

Chocolate Cherry Sourdough

Organic roller milled wheat flour, organic whole wheat flour, organic high extraction flour, dark chocolate chunks, dried cherries, sea salt, wild yeast culture.

Ciabatta

Organic white flour, organic rye flour, bakers yeast, honey, organic sea salt. A rustic Italian bread, translated means “slipper” because of the unique shape – hand mixed to create an exceptionally airy interior and crunchy crisp crust. (V)

Confit Potato

Organic roller milled wheat flour, organic high extraction flour, russet potato, garlic, olive oil, thyme, black pepper, sea salt, wild yeast culture. (V)

Golden Raisin Walnut

Country Sourdough

Organic white flour, organic whole wheat flour, organic dark rye flour, sea salt, wild yeast culture. Your daily bread, naturally leavened with a moist open crumb, slightly sour flavor and caramelized crust. (V)

Country Spelt

Organic whole wheat spelt,organic wheat flour, sea salt, wild yeast culture. Spelt is an ancestor to modern wheat. It has softer gluten and is easier to digest for those sensitive to gluten – mild and nutty flavor. (V)

Cranberry Pecan

Organic roller milled wheat flour, organic whole wheat flour, organic rye flour, pecans, dry cranberries, sea salt, wild yeast culture. (V)

Kalamata Olive & Rosemary

Organic roller milled wheat flour, organic high extraction flour, organic rye flour, kalamata olives, rosemary, sea salt, oregano, wild yeast culture. (V)

Multi Grain

Organic roller milled wheat flour, organic high extraction flour, flaxseed, quinoa, sunflower seed, sesame seed, amaranth, sea salt, wild yeast culture, fresh yeast. Our version of your everyday multi grain sandwich loaf. (V)

Oat Porridge

Organic roller milled wheat flour, organic high extraction flour, rolled oats, sliced almonds, currants, honey, sea salt, wild yeast culture. Slightly sweet with a moist creamy crumb.

Pain de Mie

Roller milled wheat flour, milk, milk powder, eggs, sugar, sea salt, instant yeast. Our “wonder” bread.

Polenta

Organic high extraction flour, organic whole wheat flour, organic white flour, semolina flour, cornmeal, Parmigiano Reggiano, olive oil, rosemary, sea salt, wild yeast culture. Creamy polenta creates a custardy moist crumb.

Quinoa-Turmeric

Organic roller milled wheat flour, organic high extraction flour, toasted quinoa, turmeric, black pepper, Za’atar, sea salt, honey, wild yeast culture.

Seeded Wheat

Organic high extraction flour, organic whole Wheat flour, organic white flour, flaxseeds, toasted sesame seeds, pumpkin seeds, toasted sunflower seeds, sea salt, wild yeast culture. Rich seedy flavor with bonus nutrients. (V)

Sesame Semolina
